Strawberry Mango Salsa
Basically, when it really comes down to it, who doesn’t love salsa? It’s healthy, refreshing and damn good. It can be eaten as a dip on a chip or used as a condiment for burgers, eggs, and sometimes sandwiches. The possibilities are endless.
Lately, it seems there are a lot of recipes branching out from the classic pico de gallo salsa that is a Mexican staple served in most restaurants. Fruit salsas seem to be the new thing and with Spring finally gracing us with its presence here in the Midwest, I thought I would give it a try. I have made a mango peach salsa in the past, but with peaches not available yet at my market, I decided to use strawberries in place of them.
This tart, sweet, and spicy salsa is not only colorful and pretty to look at but, tastes quite delicious. After one bite, you will find your self asking, “…Pico de gallo who?” The key to this salsa is quite simple. Here’s the secret: add plenty of lime juice and then enough jalapeno to give it that added kick to offset the sweetness. Viola! It is sweet and spicy with just the right amount of acidity and heat that is sure to please anyone. So grab those chips and a few beers and make it a party!
Ingredients:
- 1 Mango, cubed small
- 6 Extra Large Strawberries cubed
- 1 Jalapeño, minced
- 1 Small Container of Cherry Tomatoes, Cubed small
- 1/2 Red Onion, Chopped small
- 1 Tbsp. Garlic, minced
- 1 Bunch of Chopped Cilantro
- Juice of 1 Lime
- Salt/Pepper to taste
Directions:
- In a bowl, combine all the ingredients. Refrigerate for up to 3 hours and serve with tortilla chips.
