Spicy Sweet Potatoes
These are the perfect taters to eat when you’ve had one to many “pops” the night before and you need a fast cure. This modern take on an American breakfast staple has an extra kick of spice that will awaken your senses and send you running into the streets cheering. I usually make these the day after a holiday when everyone needs a little pick me up or for a simple Sunday Brunch. Any vegetable can be added to the mix, like red and green bell peppers for example. I ate a similar version of this at a restaurant called Nookies when I was living in Chicago. They added rutabaga, turnip, and acorn squash, along with golden raisons, causing it to taste a little on the sweet side, but still had a delicious blend of flavors. Every now and then I will add spicy sausage such as chorizo to mix it up and give it even more heat. I have to say, these are a sure crowd pleaser that will leave everyone happy.
Ingredients:
- 2 large sweet potatoes, cubed
- ½ a chopped onion
- 1 tbsp. of minced garlic
- Salt and Pepper for taste
- Olive oil
- 1 tsp. cumin
- 1 tsp. chili powder
- 1 tsp. paprika
- Couple dashes of cinnamon
Directions:
- Heat olive oil in a sauté pan
- Add in onion and garlic and sauté for 10 minutes or until onions start to brown
- Add in sweet potato
- Add in salt and pepper
- Cook until the potatoes start to get tender (about 20 minutes)
- Add in the remaining spices and continue cooking until potatoes are tender and browned
