Fried Brussels Sprouts and Eggs

I eat a lot of eggs…I mean A LOT. My boyfriend and I go through about almost 3-dozen per week since it is a staple breakfast ingredient we cook with most mornings. To say eggs get boring is an understatement and I am always trying to come up with new ways to serve them. Ham and eggs go hand in hand. I mean Dr. Seuss wrote a whole book on Green Eggs and Ham so it was a no brainer when I was rolling ideas around in my head.

I however don’t prefer green eggs, but I do happen to love Brussels sprouts (which are green), especially fried. Brussels sprouts have a weird smell, I will be the first to admit it, but something truly magical happens when they are fried and then salted. The stink disappears and a flavor explosion of epic proportions is created. Pair that with the already salted ham and then creamy egg and an out of this world taste evolves. This is probably my new favorite breakfast dish only because it is simple, easy and yummy.

Ingredients:

  • 1 Thick Slice of Country ham
  • 1 Fried Egg
  • 1 c. Fried Brussels Sprouts, shaved thin (about 10 uncooked sprouts) with a mandolin slicer.
  • Salt/Pepper
  • Oil for frying

Directions:

  1. Add Brussels sprouts to the skillet and cook without stirring until the undersides of the sprouts turn golden brown, 5 to 7 minutes. Stir to turn sprouts over, and cook other sides until golden brown, another 5 to 7 minutes. Season with salt, black pepper.
  2. While the Brussels sprouts are frying in another pan fry or baste your egg and brown your ham on both sides.
  3. Plate your dish by layering the Brussels sprouts over the ham and then topping with your fried egg. Serve warm!
