Black Bean & Lentil Burger on Brioche Bun
with cucumber yogurt sauce or spicy mayo
Beans, beans the musical fruit…or so the old song goes. Beans are probably one of the healthiest things you can eat and what better way to eat something healthy than as a “burger.” I know many of my carnivorous friends are cringing in disgust at the mention of something vegetarian, because in their eyes anything vegetarian or even vegan is sacrilege, but I am not afraid to admit that I love this burger. It has the same meaty texture as a regular beef patty without the calories or fat, making even the most skeptical a believer. It’s extremely filling and flavorful that won’t leave your belly screaming in hunger. By adding the yogurt sauce or spicy mayo as the main condiment on top (I usually add both to mine when I eat it) adds just that much more of a kick to it.
Ingredients: Yields 4 burgers
- 1 can of Black Beans, drained and rinsed
- ½ c. of Red Lentils, cooked
- 1 c. of Plain Bread Crumbs
- ½ Onion, diced small
- 1 Red Pepper, diced small
- 2 tbsp. Garlic, minced
- 2 Eggs
- 1 tbsp. Chili Powder
- 1 tbsp. Cinnamon
- 11 tbsp. Cumin Powder
- 1 tbsp. Paprika
- Salt/ Pepper for taste
- 1 sheet of Parchment Paper
- 4 Brioche Buns
Cucumber Yogurt Sauce:
Yields 4 serving
- ½ European Cucumber, peeled, deseeded and diced
- 1 bunch of Cilantro, chopped
- 1 container of Plain Oikos Yogurts
- 2 Green Chili Peppers, deseeded and diced small
- Salt for taste
Spicy Mayo:
Yields 4 serving
- ½ c. Real Mayonnaise
- 3 tbsp. Siracha

Directions:
- Pre-heat oven to 400 degrees
- Cook the lentils following the directions on the bag or box. Set aside to cool.
- Rinse and drain the black beans..
- In a food processor add the lentils and the beans and pulse until they are a thick, lumpy paste.
- In a bowl mix together all the ingredients until blended.
- Shape the burgers into 4 patties and place on a baking sheet covered in parchment paper.
- Bake for 30-35 minutes.
- While the burgers are cooking, in separate bowls, mix together the ingredients for the yogurt sauce and spicy mayo. Cover and chill for 45 minutes.
- Serve with fresh lettuce on a brioche bun with a scoop of either the cucumber yogurt sauce or spicy mayo. Feeling bold … serve with both!
